I inherited this recipe many years ago, but it originally called for melted butter in addition to olive oil.  In an effort to cut down on my use of butter (which I absolutely and unfortunately adore), I simply exchanged the butter for some additional olive oil and found that it tasted even better!

Herb Basted Salmon











4 Tbls olive oil

1 tsp dried basil

1 tsp dried parsley

1 tsp lemon juice

Salt & pepper to taste

1 lb salmon



Preheat oven to 450 degrees.  Place salmon in a 13 x 9 inch baking dish that has been prepared with non-stick cooking spray.  Mix oil, herbs, lemon juice, salt, and pepper together and baste salmon with mixture.  Bake for about 10 minutes per inch of thickness.  Serve on a bed of brown rice.
